Nifty Notion #5: Super Simple Guilt Free Ice Cream

This is so yummy. So simple. So (actually) good for you!

Banana, Mango, Coconut 'Ice Cream'.
Serves 3-4

You will need:
2-3 bananas
2 mangos
½ cup desiccated coconut (optional)

chopped fruit - ready to freeze
How to:
  1. Slice and dice fruit into small pieces.
  2. Spread evenly in a single layer in a container or on a tray.
  3. Freeze.
  4. Once frozen, place chopped fruit (with coconut) into a food processor and blend until smooth.
  5. Scoop into bowls.
  6. Devour!!! (In the most lady-like/gentlemanly manner of course!)
yes, it was as good as it looks!

  • The most basic ‘ice cream’ can be made with banana only. You can experiment with whatever fruits you so desire but it is important to use banana as the base - otherwise the consistency may be too thin and runny.

  • Once made, it is best to consume the entire quantity straightaway. Only blend up as much as is needed at the time.

Experiment, have fun, and report back here with all successful (i.e. delicious) blends!

  1. We usually just make it with banana but as summer brings with it an excess of mangoes in the yard it's a great way to use them up and add a bit of variety. The coconut was something of an experiment. It won't blend to smooth but added nicely to the flavour. Haven't tried strawberries just yet (I usually turn them into sorbet). Have fun experimenting!

    1. My apologies Rebekah - somehow I just managed to make your comment disappear :o( Not quite sure what happened but thank you for commenting.

    2. found it - here is Rebekah's comment:

this looks really interesting! I recently saw something similar somewhere else ( cant remember where) , but not with mango and coconut. How weird and cool it is that it comes out looking just like ice cream! have you ever tried strawberries with a banana? I can't wait to try this sometime!! Thanks for posting :)

  2. no worries. I hate when technical stuff goes wrong, don't you? Speaking of which...the new internet that got installed today already quit working! writing this from a phone which is not easy to write well with because the buttons are so small. Back to the drawing board!

    1. oh how very annoying! hope you can get it sorted soon :o)

  3. I made this and posted about it over the summer also! Isn't it brilliant?! But I love that you added coconut to yours, will have to try that next time! THanks so much for sharing with us at Tiny Tip Tuesday and hope to see you back next week! :)

    1. It's a sanity saver. My health dictates that I really need to be careful with my diet. We're just coming into summer here and this way I can have a treat without being naughty! Thanks for stopping by - lovely to have you here :o)

Thanks for commenting - I love to hear what you're thinking!
